 Post subject: Okonomiyaki - Lazy Kansai Pancakes

So you have some left over fish in the fridge, some tako in the freezer, and a bunch of other frozen bits that you swore you would eat some day. Okonomiyaki is a simple way to put it all together and a simple meal! So simple even I can make it! :lol:

Ingredients:
Flour (Or Okonomiyaki Mix)
Water
1 egg
Cabbage
Onions
Tako + Fish + Scallops + Shrimp + Squid + Pretty Much Anything You Like!
(A cup of flour makes two pretty large pancakes, but you'd be amazed how much you can eat)

Mix egg + flour + water together in large bowl. The consistency should be like a pancake (it pretty much is a savory pancake). After it's well mixed, throw in the cabbage (shredded) as well as whatever seafood or meat you want in your okonomiyaki.

If you have one of those griddles you can heat it to around 400f, if not, use a (cast iron) skillet, remember to put oil.

Pour the batter onto the skillet in a patty shape. Cook until golden brown (~5 min.). Flip it. Cook until golden brown.

Put the okonomiyaki on a plate, drizzle with katsu sauce + sweet mayo (if you have). Add bonito shavings + nori. Pickled ginger (red kine) on side.

Eat about 2 - 3. Get the itis. Sleep.

is the tako pre cooked? how bout the other seafoods? How bout the cabbage? does it need to be parboiled?

My tako is pre-cooked usually. The fish usually isn't, nor is the scallop, shrimp or meats. Just make sure it cooks all the way through when on the skillet. I know someone who likes bacon in it because they don't like seafood so much.

Cabbage doesn't need to be precooked, just cut it up, and throw it in. Some people like a lot of cabbage, I usually put a good handful. Can also add carrots and the like, it really is an anything goes savory pancake. :lol:

I've cooked this with kids, so I'm pretty sure you can't mess it up too much.

this recipe reminds me of a bada$$ korean seafood pancake that my friends and I got once....pm me and i'll tell you how to get said pancake....the place we got it from is no yummy's and I'll weigh it heavily before I promote this place simply because id hate to ruin it for my friends and I. Its a small place so be prepared to spend some time there....we went there with prior notice and about 9 people and spent 2 hours there.....tcks pancake sounds delicious....but i dont have any precooked tako available...too bad..

You can watch the technique at Chibo Restaurant at Royal Hawaiian. Their style might be to cook the meat n' stuff first, add the vegetables then pour the batter on... I forget exactly.

At first glance you might think, “fish pancake?” What the HECK? They are however, crazy good. . . It is a way to make something really tasty out of almost any kind of leftover protein. Here's a link to help those of you visualize them if you have not had the experience yet.

The secret, as with many things, is in the sauce and the restaurants usually will not tell you how their sauce is made. Supposedly, it a secret sauce! I find Tonkatsu sauce to be very similar, but I prefer a sauce for my Okonomiyaki that tends to be a bit sweeter. It's all a matter of individual taste and more typically, what's easier when you want to throw a meal together.

Shallowman's post also reminded me that I haven't been to Chibo for my regular fix for a while. They make a killer one that integrates Yakisoba into the Okonomiyaki. Aw crud, my mouth is watering. . . :mrgreen:

and don't forget korean chijimi! they use tako and squid and maybe fish could work too!

oooiiishhhiiiiii! It has been to long since I have ate this. The good thing about Okonomiyaki is you can put alot of different stuff into it.
